Sunday is Father's Day!   Growing up, my father and I played endless hours of Battleship and Monopoly, he took me me to all my school events and singing competitions, he took my to my very first concert (Billy Idol in 1983...), he  made me a fan of action and sci-fi movies (everything from Raiders of the Lost Ark to Aliens to Terminator), and he was my cheerleader whether I was applying to college or trying a new hobby.  And thanks, Daddy, for never batting an eye as I explored the fashions and trends of the 1980's.  Really!  You're the best.

I hope all of you treat dad to something special.  And if you *are* a dad, smile when you get that soap-on-a-rope.   Just  look at the loving eyes that are handing it to you!

As promised...drum roll...a Father's Day recipe:

Hey Huevos Rancheros

Does dad like a breakfast with more of a kick?  Spice it up for your favorite amigo with this satisfying Mexican-style egg dish.  On the side, serve black beans as suggested, slices of avocado and tomato, or fresh fruit.  Alternatively, you can turn this into a Mexican (and much healthier!!) version of Eggs Benedict by serving it on English muffins.

2 eggs
2 small corn (or flour) tortillas
Avocado's Number Guacamole
Chunky Salsa
Salt (optional)
Organic Black Beans, available canned
Yogurt (or sour cream)

1) Warm the tortillas in a pan and set aside.
2) Heat the black beans in a small pan over medium heat.
3) Heat a lightly oiled nonstick skillet over medium-high heat.  Gently crack the eggs into the pan, taking care to keep the yolks whole.  Sprinkle with a pinch of salt.  Decrease heat to low and cover the pan.  Cook the eggs only until the whites are set and the yolk has thickened but is not yet hard.
4) Place one egg inside each tortilla, topping with guacamole and salsa.
5) Serve with black beans, topped with a dollop of plain yogurt.

Serves 1
