Herbed Mushroom and Onion Flatbread: Loving Ready-Made Dough

If you shop at Trader Joe's, you most likely know about their ready-made (pizza) doughs. You'll find them in the refrigerated section in three varieties: Plain, Wheat, and Garlic & Herb. My kids prefer the Wheat over all the others, but I mix and match depending on what I'm making.
I use them primarily for two things: pizza and stuffed loaves. I'll have to do an entry about pizza sometime and my love of thick pizza stones...but that'll be another day. And stuffed loaves are so easy and always a hit. All you do is take the dough, stretch it long, fill it down the center with your favorite tapenade/bruschetta, pinch it back up, and bake it. Cut it into slices, and you have a crusty golden outside, with a yummy filled center. Stuff it with mozzarella, roasted garlic, sundried tomato bruschetta, you name it.
But I digress. Today I made a beautiful yet rustic focaccia that I want to share with you. Caramelized onions and hearty crimini mushrooms (they're baby portabellas—did you know?) add even more flavor to the already flavorful ready-made herbed dough. The criminis are available in bags, already cleaned and sliced—easy!
Herbed Mushroom and Onion Flatbread
1 bag (1 lb) Garlic & Herb Pizza Dough
½ small onion, sliced thinly
½ bag (2 cups) sliced Crimini Mushrooms
Extra virgin olive oil
Salt
¼ cup Shredded Parmesan Cheese
1) Preheat oven to 500 degrees (with pizza stone inside if using one).
2) On a well floured surface (if using a pizza stone) or on an oiled baking sheet, stretch pizza dough gently with hands to approximately a 12” diameter. Don’t worry about rolling it perfectly flat—we’re going for rustic.
3) In a skillet, sauté onion slice with 1 Tbsp of olive oil until onions are soft. Add mushrooms and sauté just until mushrooms are beginning to brown.
4) Top pizza dough with onions, mushrooms, and a drizzle of olive oil. Sprinkle with a little salt.
5) Place pan in oven (or transfer to the pizza stone) and bake for 15 minutes or until dough is golden.
6) Remove from oven, sprinkle with Parmesan, and serve.







This is a sure conversation starter at any party. I am not crazy about the dried food ,but Iwill try this one!
That's a complete dose of health... works for me! Only there is a little problem, I don't have easy access to all these ingredients, are there any other replacements possible?
