No need to swing by the coffeeshop: Black Currant Scones



It's a breeze to make warm, flaky scones right at home with Trader Joe's Buttermilk Pancake & All Purpose Baking Mix.  In fact, I didn't have to think much about this recipe at all...it's written on the box.  I just thought I'd share the idea with you since not everyone might think "scones" when they see a box of Buttermilk Pancake baking mix on the shelf.

Just follow the very simple recipe on the side and add the dried fruits or nuts of your choice.  I also add one tsp of cinnamon to the baking mix.  The box suggests soaking dried fruits first, but you can skip this step.  I've made these adding about 1/2 cup of either dried cranberries, dried cherries, or dried black currants (above).   Before I cut the dough into pieces, I sprinkle some Turbinado (raw) sugar on the counter and press the top of the dough into it.  The little crystals of sugar are a pretty way to finish off the scones.

Serve the scones with honey or jam, alongside some coffee or tea.  My kids like to dip them in milk!

    You're right--I wouldn't have thought of scones upon seeing this product. Tried it with cinnamon and raisins and everyone at the office this morning liked it. I think the turbinado sugar coating was the special touch that made it seem "professional."
