Yogurt marinade for chutney-stuffed chicken
My title today sounds way more fancy/complex than it is. I thought I'd share an easy marinade for chicken using some really basic ingredients. The yogurt-based marinade really tenderizes the chicken and makes for great kabobs or oven-baked chicken breasts.
For the marinade, you'll need:
1 cup yogurt
1 tsp saffron
1/4 tsp pepper
1/2 tsp salt
1/2 medium onion, cut in thin slices
1) Combine all these ingredients, stirring the saffron in until the marinade is a bright yellow (to make it easier, let it all sit for a few minutes to allow the saffron to soften up). Add your chicken to the marinade (either whole breasts or 1-inch chunks for kebabs). Make sure the chicken is well coated on all sides, and place in the fridge for at least 5 hours.
2) For kebabs, push the chunks onto skewers and cook for about 15-20 minutes in a preheated 400 degree oven, or until done. Even better, use your grill.
3) Or, for stuffed chicken breasts, remove the chicken from the marinade and slice a deep pocket along the side of each breast. Stuff each breast with 1 heaping Tbsp of your favorite chutney (such as Apple Cranberry Chutney or Mango Ginger Chutney), and bake at 350 degrees for about 30-35 minutes depending on the thickness of the breasts.







A-ma-zing. I love all these ideas. I always wondered what I could do with the chutney besides just dip something into it. Can't wait to try this. The Apple Cranberry one sounds especially good for this.
