Arugula Salad with Pine nuts and Parmesan



My husband's Uncle Bill was here recently and let me in on his favorite arugula salad recipe.  Now, Uncle Bill is a wine connoisseur, a restaurateur, and he just really knows his food.  So when he offered to make a salad with one of my favorite greens, I jumped at the chance. 
It's a very simple salad and perfect in that simplicity.  This salad really doesn't require measuring, but I included some measurements below.  If you love pine nuts, add more pine nuts.  If you love Parmesan, then load it on.
Uncle Bill toasts his own pine nuts using his secret method (no really, I can't tell you, he made me promise).   So either get Trader Joe's toasted pine nuts or toast them yourself in the oven or on the stovetop.

Uncle Bill's Arugula Salad

1 7-oz bag Arugula (about 5 cups)
1/4 cup extra virgin olive oil (I use unfiltered olive oil in salads)
1/2 cup toasted pine nuts
3/4 cup shaved Parmesan
Salt
Juice of 1/2 lemon

1) Toss the arugula with the olive oil till coated.
2) Add the pine nuts and Parmesan.
3) Add a little salt to taste and the lemon juice.  Toss lightly and serve.

        

The Parmesan can be bought already shaved at Trader Joe's.  It's also simple to shave your own even if you don't have a shaver.  Use a very coarse grater - don't press too hard and you'll get closer to shaved than grated.  I used a very small block of Parmesan Grana Padano from Italy (about a .25 lb piece, of which I used 2/3).  I have this great little grater that I got from IKEA (shown in the photo ) that comes with a very coarse grater  and a fine grater that snap over a plastic container.  With the coarse grater, it takes about 20 seconds to "shave" a cup of Parmesan. 

Now here's another little trick.  If you want to make this salad into a light meal, boil some pasta (say half a bag of penne) and toss it all together, allowing the arugula to wilt slightly.
