Forget about French fries - try Baked Sweet Potato Fries instead



When I lived outside of Chicago, there was a restaurant there that had THE best sweet potato fries.  They were deep fried and I would dip them into a homemade BBQ sauce they served there.   I still love sweet potato fries, but I bake a healthier version in the oven at home (although that's the first restaurant I'll hit if I'm ever back in Chicago!).
I made some vegetable curry this week, and I happened to have a bag of Trader Joe's peeled and pre-cut sweet potato spears handy.  I tossed the spears with some olive oil (just enough to coat lightly), curry powder, salt, and a touch of sesame oil.  I tossed them in the oven and cooked according to directions.  Minutes later, we had tasty fries that went over big, especially with the kids.
Sweet potatoes are packed with nutrients (very high in vitamin A, vitamin C, and carotenoids), have a low glycemic index, and are delicious.  Sweet potatoes are so versatile.  Wona and I use them in our Sweet Potato Samosas, we bake cookies with sweet potato puree, and toss them in with a roasting chicken.

    TJS also has frozen sweet potato fries. I remember trying to decide between getting the frozen ones vs. making them myself using the fresh spears. I think I was in a budget-conscious frame of mind; I believe I chose the frozen ones because they were slightly cheaper. Our family loved them. However, next time I might try making them myself. The frozen ones had a slight coating, I'm assuming to keep them from sticking? It was kind of like a light flour "skin". I LOVE sweet potatoes!

    I think the key here is to only very lightly coat the fresh cut fries with oil. I've found that if you over-do the oil, they end up completely mushy and never crisp up.

    My husband, the budding chef, has made baked sweet potatoes a staple at our house. He has this spicy mayonnaise sauce (home-made mayo is next I think) or one with chipolte(?) sauce. There is nothing tastier than baked sweet potatoes! I concur!
