Ring in the New Year with Sparkling Pomegranate Cocktail

Actually what we call the seed is the aril, the juicy red part which surrounds the white seed. The jewel-like arils have got to be one of the prettiest edible garnishes around. Using them in a festive cocktail is perfect for holiday entertaining. For a non-alcoholic version, use Sparkling Pomegranate Juice instead of champagne and pomegranate juice.

Sparkling Pomegranate Cocktail
6 tsp fresh Pomegranate Seeds
1 bottle champagne or sparkling wine, chilled
1 cup Just Pomegranate (100% Pomegranate) juice, chilled
1) Put 1 tsp pomegranate seeds in each cocktail glass.
2) Combine champagne and pomegranate juice in a pitcher. Pour into cocktail glasses and serve.
Prep time: 5 minutes
Serves 6

I love pomegranate! My mom bought some today and she added it on her 13th fruits collection for New Year! Too bad I don't have champagne to make the Cocktail.

Where I was growing up, pomegranates were always a big treat in our home. I saw them the other day at the store and thought, "Oh, that would be fun!" But, then I thought, "Eating all those seeds?? Will that really be fun??" This is a great new way to enjoy a treat from my childhood. Thanks!
