A Cheer for Peach Salsa ... two simple meals made just peachy



Ever have those times when you get hooked on one food and have it again and again?  Lately I've been having brown rice and black beans topped with Peach Salsa from Trader Joe's.  I haven't tired of it yet!  If you haven't tried the Peach Salsa, it has a great combination of sweet, spicy, and smoky flavors.  It's the perfect highlight in this very simple meal.  In all fairness, I have to add that while I love the Peach Salsa, my husband is not a fan of it.  He says that chunks of peach have no business in a salsa.  So I think that either you will love it or hate it.  I can't get enough of it!

Here are two quick and easy meals that take literally just minutes to put together.  It's an easy lunch for one, or a quick meal on the run.  The first is black beans and rice topped with Peach Salsa.  That's it!  The nice thing about this meal is that it's a classic way to eat a complete protein based on plant sources (rice and beans together contribute all 9 amino acids).  Trader Joe's Frozen Brown Rice makes it eays to have healthy brown rice in minutes (rather than the typical hour it takes to cook the conventional way).  The black beans are organic and available canned, which makes it easy to take advantage of this very nutritious food.  The Peach Salsa is the splash of flavor and color that completes the classic combination.

Peachy Black Beans & Rice

1 can black beans
1 pouch Frozen Brown Rice
Peach Salsa

1.) Heat the rice in the microwave per directions.
2.) Meanwhile, heat the beans in a small saucepan.
3.) For each serving, take about half the rice (1 cup), top with half the black beans (1 cup), and add a couple tablespoons of salsa.



The second one is an overstuffed quesadilla with cheese, fresh tomatoes, microgreens, and the same Peach Salsa.  I was addicted to this type of meal back in my grad school days (minus the Peach Salsa...no Trader Joe's in my life back then...).  It was a satisfying and easy one-person meal that I made again and again.

Peachy Quesadilla

1 medium tortilla
1/2 cup Shredded 3 Cheese Blend
1/2 cup chopped tomatoes
1/2 cup loose Organic Microgreens
Peach Salsa

1.) Place the tortilla in a skillet over medium-high heat. Sprinkle with cheese.
2.) When the cheese has melted, put the tortilla on a plate.  Fill one side with tomatoes, microgreens, and salsa.  Fold over.

    This peach salsa is what I used to open my children up to fish. The salsa, combined with some fresh mangos and perhaps some cilantro and some sweet red onions makes the perfect topping for a large piece of Alaskan halibut. The kids love the sweetness of the salsa and forget about how healthy it is. My favorite product!
