Healthy Haystacks: A Mediterranean Lentil Supper
We tried it for dinner last night, and our whole family enjoyed this healthy twist on taco salad. The kids enjoyed assembling their own haystacks and picking out their choices of toppings. All combinations were delicious!
Judging from how popular pre-cooked brown rice and lentils are at Trader Joe's (I always spot people stocking up on these two items - they seem to fly off the shelves!), I'm guessing this dinner idea will be popular with Trader Joe's fans. Thank you, Daneen, for the recipe! And for even more ways to use steamed lentils, check out our cookbook for soup, salad, and wrap ideas using lentils.

This is a superb alternative to the usual fastfood stuff which are more on fats. Parents should follow the recipe and make it a daily habit to prepare as snacks.

Thank you for you help, I added alt tags to my website as soon as I read your article. Here’s a good technique to embed flash and still be able to validate your code.If you just let Dream weaver handle your Flash embedding, your code will not validate.Good luck

I think Haystacks were one of the first recipes I ever made myself. And it's no wonder why: The recipe has only three ingredients, and you don't have to cook anything. Plus, they're just a little messy, which makes this recipe fun for the kids. Try my butterscotch haystacks recipe, too
