If you do, use just 1/2 tsp baking soda.  Self-rising flour has baking powder in it, and baking powder is made of baking soda and other agents. Some of my favorites were J. Bookwalter, Northstar, and Pepper Bridge. There are some really outstanding wines being produced in that area.
